Honey should be stored in a dark, dry and odorless place. Since honey attracts water and odors, the storage containers must be well closed and made of food-safe material.
The storage temperature also has a major influence on the honey. A temperature of 15 °C is ideal, but the honey also withstands storage at room temperatures of around 20 °C, as well as storage in the freezer.
Carefully stored honey can be kept for many years and decades. The statement on the label "Best before end..." usually states a consumption period of two to three years. This information is required by the food law; however, the effective shelf life is much higher with quality honeys.
